Just this past January I started looking into Gluten free recipes, just to give it a shot. I have discovered that many of my recipes already are G-free, and some just need a tiny tweak. I know people are looking for more variety, so I am sharing my dishes.
Last night I made Green Turkey Chile, it turned out to be delicious and super light. If you have never had hominy, it’s a delight. In my house growing up it was a side dish like potatoes or rice, it wasn’t until high school that I discovered not everyone knows what it is.
2 tablespoons light oil
1 small white onion diced
1 can whole green chiles, diced by hand
2 teaspoons herbs de Provence
1 teaspoon chili powder
1 tsp garlic salt
1/2 teaspoon pepper
1 lb. Ground Turkey, the more dark meat, the better
2 small cans Cannelloni Beans
1 small can white hominy
4 cups chicken broth (Gluten Free if needed)
In heavy pot, heat oil over medium-high heat. Add the onion and cook until softened, about 8 minutes. Add green chiles, herbs, chili, garlic salt and pepper, cook for about 2 minutes. Add ground turkey, break up with a wooden spoon and cook through, about 6 minutes. Add broth, beans and hominy, bring to a boil over high. Partially cover the pot. Reduce heat and simmer until chili is slightly thickened, 25-30 minutes. Add more garlic salt and pepper to taste. Enjoy!
