I LOOOOOOOOVE Au Gratin potatoes and I don't make them very often, because honestly, I'd eat the whole pan myself, if I was left alone in our house. I made this recipe for a family dinner last Saturday, and they are SO yummy, and not that difficult. They honestly are some of the best au… Continue reading Delicious, Dairy Free Au Gratin Potatoes

Can you eat out while following a Low FODMAP Diet?
So you all know I've been experimenting with different diets to deal with some tummy troubles and other issues. I remember coming across a low FODMAP diet years back and I thought "heck no, I can't follow that plan". Alas, I'm giving it a shot at least for a couple of weeks to see if… Continue reading Can you eat out while following a Low FODMAP Diet?
Simple, Tasty AF Valentine’s Day Tuscan Chicken
Y'all. I love to cook, and I especially love to go out to restaurants and eat, BUT we usually skip Valentine's Day out because most restaurants serve a pre-fix menu filled with dishes we can't even enjoy (and don't get me started on the desserts). Plus, V-Day is so dang expensive, I'd rather spend money… Continue reading Simple, Tasty AF Valentine’s Day Tuscan Chicken
Simple, Tasty AF Beef Bowl
Sounds a bit strange but super tasty. Ground beef cooked through. Add diced bell pepper and red onion. Add mushrooms and green beans and saute all together. Add coco aminos, 1-2 tablespoons, and eat as is, or serve over a little bit of white rice.

TIP cook your veggies in the microwave for less clean up. I cooked this spinach… Continue reading Pasta without the guilt

What I Learned from Cutting Out Soy
So we know cutting out soy would be an adventure, but I didn't know it would be so interesting. Of course I was bummed when I looked on my can of La Victoria Green Enchilada Sauce, and although it is gluten free, I discovered last week that it does contain soy. DRAT! I'm thinking I'll… Continue reading What I Learned from Cutting Out Soy

Moist & Delicious Pumpkin Bundt Cake Recipe (DGS Free)
My girls and I had never made a scratch cake that was gluten free and dairy free, much less a bundt cake. We were inspired by these super cute, holiday plates and gorgeous, red cake stand from Target. We found the recipe on Genius Kitchen and we used vanilla coconut milk (no soy). We did… Continue reading Moist & Delicious Pumpkin Bundt Cake Recipe (DGS Free)
