This was the first soup of the season and I posted how grateful I am for healthy food, and one of my besties asked for the recipe. So I was forced to write it down. Haha.
I meant to make this with a can of diced tomatoes, but forgot to buy them, so I improvised with salsa instead. Feel free to use either idea, or skip it all together. Either way it’s a yummy and simple soup for the whole gang. It would be great for football nights or Halloween too.
1 pound ground turkey, browned in large pan seasoned with salt, pepper, garlic pepper and cumin
5 green onions, diced and added to browned meat
1 small can mild diced chiles
6 cups chicken broth
2 large white potatoes diced
2 large carrots sliced in half lengthwise and diced
1/2 cup salsa
1/2 cup diced cilantro
4 cups baby spinach chopped
Brown meat and add spices. Add onion once browned and stir. Add in all other ingredients except spinach. Stir and bring to a boil. Turn down to simmer for 20 minutes or until vegetables are cooked through. Add spinach and stir. Cook for another 5 minutes.
Alternative is adding spinach to the bottom of soup bowls as you serve, and spooning soup over spinach to wilt. Use this method if not everyone likes spinach. ❤️
