My fam loves when I make guacamole. The avocados are ripe at my local store right now, so I whipped up a batch. This is one tasty, allergy friendly delight that everyone will enjoy. Serve with your favorite chips and veggies.
3 medium to large avocados, diced and smushed a bit
1/2 lime juiced
1-2 diced Roma tomatoes, no seeds
Garlic powder & salt and pepper to taste
Mix together and serve. Always reserve one of the pits to keep in the bowl, this helps with keeping the guacamole from turning brown.
Sometimes I add diced green chiles as well, or you can add diced jalapeños if you want to spice it up, and if your kids, and gringo husband, can handle the heat. Serve alongside an ice cold, margarita or glass of white wine.
