My girls and I had never made a scratch cake that was gluten free and dairy free, much less a bundt cake. We were inspired by these super cute, holiday plates and gorgeous, red cake stand from Target.
We found the recipe on Genius Kitchen and we used vanilla coconut milk (no soy). We did use the gluten free flour from Trader Joe’s and it worked like a charm. This cake is my husband’s new favorite and was so moist we couldn’t even believe it, the secret ingredient is applesauce. You could really tell it was made with love and quality ingredients.
We topped the cake with a yummy, white, dairy free glaze also from Genius Kitchen. I do think we need to make it a little thicker next time, but it was super tasty regardless.
My youngest is now plotting our next bundt cake adventure and she’s already thinking vanilla cake with chocolate chips, topped with a velvety glaze. I’m excited to see how it turns out.
