It’s not that I dislike pine nuts. I rather enjoy them. Unfortunately they are super expensive and I will only use them for my pesto while the rest of the bag sits in my cupboard for months. That made me think, do I need those nuts in my pesto – nah…and I was right.
2 cups fresh basil leaves, washed and patted dry
2 cloves garlic
2/3 cup EVOO
1/2 cup grated Parmesan or Romano cheese
Salt and Pepper to taste
Combine basil, garlic, salt and pepper in a blender or food processor. Pulse until chopped. Add 2/3 cup of EVOO and blend until smooth. Pour into a bowl and stir in the cheese. Serve immediately with drained hot pasta or use as a dip for veggies, of course I used Gluten Free pasta, but you can use whatever pasta your little heart desires. Voila. Poor Woman’s Pesto. No nuts, all the flavor.
