Whenever I am invited to a party, I make sure to ask what I can bring. Most barbecues or backyard events call for a pasta salad. We are going to a shindig tonight and I have all the ingredients in my kitchen to make a killer salad – quick and simple.
1 lb. Pasta – Penne or whatever shape you desire
5-6 Small Multicolored Peppers
1/2 Can Olives, Sliced in Half
1/2 Cup Crumbled Feta Cheese
1 Cup Artichoke Hearts, Quartered
1 Tablespoon Dried Parsley Or Fresh
Garlic Salt & Black Pepper to taste
2 Capfuls of Ken’s Steakhouse Italian Dressing with Aged Romano Cheese
Boil water to cook pasta. Once the water starts to boil, drop in pasta and stir. Start to cut veggies for the salad. De-seed and slice peppers to desired size. Quarter the artichoke hearts and slice the olives. Once the pasta is cooked, drain and run cool water over the colander. Put Pasta into a bowl. Add peppers, olives, artichoke hearts and crumbled feta. Add parsley, salt, pepper and Ken’s Italian Dressing. Toss together. Chill for 1-2 hours before serving. Add one additional capful of Ken’s Steakhouse Italian Dressing if salad gets dry in the fridge.
Serve with a light, dry Chardonnay like Dreaming Tree or Santa Margherita Pinot Grigio. Enjoy!
